How Long Does Milk Last?

By James OkaforReviewed 2026-01-01

Milk keeps 5–7 days past its printed date unopened and about a week once opened, stored at 40°F or below. It freezes for 3 months with good quality — thaw in the fridge and shake. Milk never stays at room temperature for more than 2 hours.

Milk is the most-bought food in most kitchens and the one that gets thrown away the most. The truth is more forgiving than most people think: milk does not die on its sell-by date, and a carton you thought was spoiled is often still fine.

The two rules that matter: keep the fridge at 40°F or below, and keep the carton closed. Temperature is everything with milk — the difference between a carton that lasts a week past its date and one that sours in three days is almost always the fridge shelf it lives on.

How long milk lasts

Storage method Duration Best practice
Fridge (unopened) 5–7 days past printed date Keep at 40°F or below
Fridge (opened) About 1 week Reseal tightly; store on a shelf, not the door
Room temperature 2 hours max (1 hour above 90°F) Discard after the limit — reheating doesn't help
Freezer 3 months (best quality) Thaw in the fridge; shake well before use

Storage conditions that actually matter

The single biggest mistake is the fridge door. The door is the warmest part of the refrigerator, and it swings open dozens of times a day, so the temperature there can swing by 10 degrees or more. Milk, yogurt, and eggs belong on a middle or lower shelf in the back, where the cold is stable.

Keep the carton closed whenever possible — every open lets warm air in and speeds up spoilage. And pour from a clean spout or glass: backwash from a used cup puts bacteria into the carton and visibly shortens its life.

Storage tip

Buy the smallest size you will actually drink, and store it on the coldest shelf — not the door. A half-gallon you finish is cheaper than a gallon you pour down the sink. ::

How to tell milk has gone bad

The nose is the best tool. Sour, acrid, or barnyard smell means the bacteria count is already high — discard it. If the smell passes but the taste is off, the carton is past its prime. Visible curdling, a lumpy texture, or a yellowed separation are all definite signs of spoilage. When in doubt, throw it out.

Food safety

Never taste milk to "check" it once the smell is off. One sip of badly spoiled milk is unlikely to be dangerous, but it is not worth the gamble — and it is a bad habit for foods that carry real risk. Smell first, always. ::

Does milk freeze well?

Yes, with a texture trade-off. Milk freezes safely at 0°F for up to 3 months and stays safe indefinitely beyond that. Freezing separates the fat, which makes thawed milk slightly grainy — fine for cooking, baking, and smoothies, less ideal for drinking straight. Thaw in the refrigerator, not the counter, and shake or stir vigorously before use. Freeze only in containers with headroom: milk expands.

Freezing tips

  • Freeze in portions you will use at once, since refreezing thawed milk is not recommended.
  • Leave about an inch of headroom in the container — milk expands as it freezes.
  • Label with the date; use frozen milk within 3 months for best quality.

Frequently asked questions

How long does milk last after the sell-by date?

Stored at 40°F or below, unopened milk keeps about 5–7 days past its printed date, and opened milk about 5–7 days past that date too — roughly a week once opened. The date is peak-quality guidance, not a safety cutoff. Trust your senses: if it smells sour or tastes off, throw it out regardless of the date.

Can you freeze milk?

Yes, milk freezes safely for up to 3 months at 0°F. Thaw it in the refrigerator, never on the counter, then shake well — freezing causes a slight separation and grainy texture that disappears when shaken. Frozen milk is ideal for cooking, baking, and smoothies. It stays safe indefinitely frozen; the limit is quality.

Why does milk spoil even when refrigerated?

Because the refrigerator door is the warmest part of the fridge and swings open constantly. Milk stored in the door experiences temperature swings that accelerate spoilage bacteria. Store milk on a middle or lower shelf in the back, where the temperature is most stable and coldest.

How long can milk sit out?

Never more than 2 hours at room temperature — and only 1 hour if the room is above 90°F. Milk in the 40–140°F danger zone grows bacteria rapidly. After 2 hours, throw it away; reheating does not make it safe.

What does spoiled milk look and smell like?

The first sign is almost always a sour, acrid smell. As spoilage progresses you may see curdling, a lumpy or thickened texture, and an off or bitter taste. A sour smell alone is enough to discard the carton — the cost of milk is nothing compared to a foodborne illness.

How Long Does Cheese Last?

Hard cheese keeps 3–4 weeks after opening in the fridge; soft cheese 1–2 weeks. Grated hard cheese freezes for 6 months. Trim mold off hard cheese (1 inch around the spot), but throw out any moldy soft cheese. Wrap in paper, not tight plastic.

Shelf life

How Long Does Butter Last?

Butter keeps 1–3 months in the fridge and 6–9 months in the freezer. Salted butter can stay on the counter a day or two for spreading; unsalted should stay refrigerated. Spoiled butter smells sour or rancid. Butter is the most freezer-friendly dairy.

Shelf life

How Long Does Yogurt Last?

Yogurt keeps 1–2 weeks past its date unopened and about a week once opened, stored at 40°F or below. It freezes for 1–2 months but turns watery — fine for baking and smoothies. Mold, a yeasty smell, or separation that won't stir back means it's bad.

How to Store Food in the Refrigerator

Set the fridge to 40°F or below. Ready-to-eat food on top, dairy and eggs in the middle, raw meat on the bottom shelf. Produce in the crisper, condiments in the door. Rotate FIFO and check the temperature weekly. Every food has a shelf, and that shelf keeps it safe.

Food Safety Temperature Guide

The danger zone is 40–140°F — perishable food can't sit in it for more than 2 hours (1 hour above 90°F). Refrigerate at 40°F or below, freeze at 0°F or below. Cook poultry to 165°F, ground meat to 160°F, whole cuts and fish to 145°F. Reheat leftovers to 165°F.

How Long Do Eggs Last?

Eggs keep 3–5 weeks from the pack date in the fridge at 40°F or below — store in the original carton, never the door. US eggs must be refrigerated. Freeze eggs out of the shell for up to a year. Trust the smell test at the bowl, not the float test.
