How Long Does Butter Last?

Butter keeps 1–3 months in the fridge and 6–9 months in the freezer. Salted butter can stay on the counter a day or two for spreading; unsalted should stay refrigerated. Spoiled butter smells sour or rancid. Butter is the most freezer-friendly dairy.

Butter is the most forgiving food in the dairy aisle. It lasts months in the fridge, most of a year in the freezer, and — for salted butter — a few days on the counter. About the only way to ruin it is to leave it out too long, or leave it open in the fridge until it tastes like everything else in there.

Storage conditions for butter

Butter's enemies are air, light, and fridge odors. Air oxidizes the milk fat and turns it rancid; light speeds that oxidation; and butter absorbs the smell of whatever is next to it. That is why the original foil wrapper matters: keep butter in it, folded closed, or move it to an airtight butter keeper.

The butter compartment in the fridge door is fine — unlike milk, butter tolerates the door because it is not the most sensitive dairy. If you keep both salted and unsalted, mark them: they are easy to confuse and the shelf lives differ.

How to tell butter has gone bad

The tell is the smell. Fresh butter smells sweet and mild; spoiled butter smells sour, cheesy, or rancid — like stale nuts or old paint. Taste confirms it: rancid butter tastes sharp and bitter even in small amounts.

Check the surface too. Dark yellowing, a slimy film, or mold spots on butter mean it's past its prime. If only the very edge is discolored, trim it off — the interior is fine. If the smell is off anywhere, discard the whole stick.

Thaw in the fridge for a few hours, or grate frozen butter straight into dough — it is a baker's secret weapon for flaky pastry.
