How Long Does Ground Beef Last?

Raw ground beef lasts 1–2 days in the fridge at 40°F or below and freezes for 3–4 months; cooked ground beef keeps 3–4 days. Cook ground beef to 160°F. Gray, slimy, or sour-smelling raw ground beef is bad and must be thrown out, not cooked.

Ground beef is the fastest-spoiling meat in the meat case, and there is a reason: grinding mixes surface bacteria through the whole batch. A steak can keep bacteria on its outside and last days; ground beef has that bacteria stirred into every bite, which is why it spoils faster and must be cooked well done.

The practical rules are short and worth memorizing: two days in the fridge, freeze what you will not cook, cook to 160°F, and throw out anything gray and slimy.

Storage conditions for ground beef

Raw ground beef goes straight into the fridge on the bottom shelf, in its original packaging on a plate to catch any drips. The 1–2 day window assumes the fridge is truly at 40°F or below — check with a thermometer, because the dial is not the temperature.

If you buy in bulk, portion the meat and freeze it the day you bring it home. Freeze it flat in airtight bags so it thaws in a fraction of the time, and label each package with the date. Ground beef is one of those foods where "meal prep day" and "freezer day" are the same thing.

Ground beef is a high-risk food. Refrigerate at 40°F or below, cook to an internal temperature of 160°F, and never thaw on the counter. Discard raw ground beef kept more than 2 days, and cooked ground beef kept more than 4 days. ::

How to tell if ground beef is bad

Fresh raw ground beef is bright cherry red on the surface (the interior can be darker or brownish from lack of oxygen — that is normal). Spoiled ground beef is gray or brown all the way through, feels slimy or sticky instead of cool and moist, and smells sour, pungent, or distinctly off. Any of these means it goes in the bin.

Do not cook it to try to save it. Cooking to 160°F kills living bacteria, but some bacteria produce heat-resistant toxins, and the illness comes from the toxins. This is the exact reason the smell test matters more for ground beef than for steak.

Never taste raw or cooked ground beef to check it, and never "cook it well done to be safe" once it has gone bad. If it is past 2 days raw or 4 days cooked, or smells wrong, discard it. Foodborne illness is not worth a pound of meat. ::

Freezing and thawing ground beef

Ground beef freezes well for 3–4 months and stays safe at 0°F for far longer. Freeze in airtight, moisture-proof packaging — a vacuum sealer or a zip-top bag with the air pressed out prevents freezer burn. Portion it flat before freezing so it thaws quickly and you only thaw what you need.

Thaw in the refrigerator overnight, in cold water in a sealed bag (change the water every 30 minutes), or in the microwave (cook right after). Never on the counter. Once thawed, cook within 1–2 days and do not refreeze raw.
